SUGAR
Sugar in perfume is an interpretation of sweetness, often suggesting candy, icing or the warm character of cooked sugar. It can make a fruit note feel candied or give a soft, dessert-like edge to the fragrance. The effect may be airy or dense, and sugar does not automatically mean a dark caramel or toasted scent.
Pure sucrose, the substance in ordinary table sugar, is odourless. Perfumers therefore use fragrant materials to express the associations of sweetness, rather than relying on sugar crystals for their smell. For example, aroma materials such as Furaneol can contribute caramel-like and fruity effects; this is one possible tool, not a recipe for every sugar note. The surrounding citrus, flowers or woods determine whether the final impression feels bright, creamy or richly gourmand.
